Makroudh (also spelled makroud or maqrud) is Kairouan’s signature sweet. Once you know what to look for, buying it is easy. Learn the basics in our makroudh guide.

Where to look

  • Specialist pastry shops in the medina and on the main roads sell it fresh every day, and several well-known family brands are named by locals. Ask your hotel host which they prefer.
  • Many shops let you taste before buying. Take the opportunity.
  • Shops that make it on the premises usually have the freshest stock. If it smells of old oil, move on.

Prices

Makroudh is normally sold by weight, and prices vary by shop, filling and season. We do not quote figures, because they change. Compare two or three shops, and ask for the price per kilo before you order.

What to look for

  • Colour: golden, not dark brown.
  • Texture: a firm outside and a soft, moist date centre. It should not feel greasy.
  • Varieties: classic date-filled pieces, and versions with almonds or other fillings. Ask what is inside if you have allergies (gluten, nuts).

Taking it home

  • Ask for a sturdy gift box; makroudh keeps for several days in a cool place.
  • Do not seal it in a hot car in summer.
  • Check airline rules for food if you fly.

Pair it with

A glass of mint tea, a short stroll through the medina, and a food guide for the rest of the meal.
